Description
Domaine Sylvain Dussort’s Bourgogne Rouge Côte d’Or 2021 is a beautifully aromatic Pinot Noir that captures the red-fruited, silk-textured charm of Burgundy at its most alluring. Sourced from three parcels near Volnay in the northern end of Meursault, it combines freshness, finesse, and subtle depth in a style that feels both lifted and quietly seductive.
Tasting Notes
In the glass, this is a graceful, translucent red Burgundy with a polished, elegant profile. The nose opens with red cherries, ripe strawberries, wild roses, violets, dried herbs, and a touch of damp forest floor, giving it both perfume and complexity.
The palate is energetic and juicy, with sweet cherry, dried raspberry, herbal stems, liquorice root, crushed stones, and a fine woodland character. Tannins are supple and melting, balanced by refreshing acidity, while the finish is velvety, vibrant, and impressively layered. This is a wine that can be enjoyed now for its charm and purity, but it also has the structure to develop gracefully over the next few years.
Production
The fruit comes from three parcels in the northern part of Meursault, close to Volnay, where clay-rich soils are particularly well suited to Pinot Noir. The vines average around 30 years of age, and the grapes are harvested by hand before undergoing total destemming at the cellar. Fermentation begins with a three-day cold maceration, followed by around ten days of fermentation in open wooden vats. The wine is then aged for 12 months in a combination of large and small barrels, with 20% new oak, before final blending.
Food & Serving
This Côte d’Or Pinot Noir is a natural match for roast duck, herb-crusted chicken, mushroom risotto, veal, or soft cheeses like Brie and Saint-Nectaire. Serve it slightly cool at around 14–16°C to highlight its perfume and freshness. Decanting is optional, but 20–30 minutes can help open up its aromatics if enjoyed young.
