Domaine Rolet Pere & Fils, Arbois Vin Jaune, 2017

Domaine Rolet Père & Fils’ Arbois Vin Jaune 2017 is a classic expression of Jura’s most distinctive white wine, made exclusively from Savagnin and aged in the traditional sous voile style. Sourced from the south-west facing “Chagnon” parcel and harvested by hand at full maturity, it captures both the heritage and the complexity that have made Vin Jaune one of France’s great vinous specialties.

Tasting Notes
In the glass, it shines with a deep golden color that hints at its long élevage and oxidative character. The nose is layered and expressive, opening with walnut, dried fruit, curry spice and subtle sherry-like notes. On the palate, it is powerful, dry and remarkably persistent, with a vivid, almost saline mineral edge that keeps the wine taut and focused. The finish is long and lingering, and its structure suggests outstanding aging potential over many years—indeed, it can evolve beautifully for decades.

Production
The Savagnin grapes come from the Chagnon parcel in Arbois, situated between Montigny and Les Arsures with a south-west exposure that encourages even ripening and optimal sun exposure. The grapes are hand-harvested at full maturity, then carefully selected before undergoing a long traditional vinification and maturation: 6 years and 3 months in Burgundy barrels under sous voile, with the barrels left un-topped and without racking, allowing a natural veil of yeast to develop and shape the wine’s oxidative complexity.

Food & Serving
This is a superb match for rich, savory dishes such as braised veal with morels, Bresse chicken, game, and mature Comté cheese. Serve slightly cool, around 12–14°C, and consider opening the bottle in advance or decanting briefly if you want the aromatics to unfold more quickly, though it is not essential.
