Production

Harvesting is done by hand to ensure careful selection of healthy, optimally ripe berries, preserving the natural balance of fruit, acidity, and tannin. In the cellar, the grapes are vinified with a light touch—often incorporating a proportion of whole clusters for aromatic lift and structure—followed by spontaneous fermentation with native yeasts. The wine is then aged in Burgundy barrels (with a restrained use of new oak) to respect the purity of the fruit and terroir, and is bottled with minimal intervention to retain its precision and vibrancy.
