On the palate, it is taut and focused, with a concentrated core of floral notes and juicy orchard fruit supported by crushed limestone minerality and a light touch of smoke. Production
The grapes come from selected parcels in the commune of Pouilly-Fumé, where the soils vary from limestone and Kimmeridgian clay to flint, contributing both freshness and the region’s trademark mineral character. The Sauvignon Blanc is gently pressed in a pneumatic press, then fermented in temperature-controlled stainless steel tanks to preserve purity and aromatic definition. A short period on the fine lees adds a little more texture and depth to the finished wine.

Food & Serving
This Pouilly Fumé is a natural match for oysters, shellfish, grilled white fish, sushi, goat’s cheese, and salads with fresh herbs or citrus vinaigrettes. Serve well chilled, ideally around 8–10°C, and decanting is not necessary.
