Sourced from vineyards around Fontenay-près-Chablis and rooted in the famed Kimmeridgian limestone, this wine bridges tradition and contemporary finesse in a wonderfully pure, terroir-driven style.

Tasting Notes
In the glass, this Chablis Bio 2023 shows a pale straw-yellow hue with greenish glints, signaling its youth and freshness. The nose is delicate yet precise, with aromas of lemon zest, green apple and white flowers layered over wet stone, chalk and a subtle saline breeze. Hints of fresh herbs and crushed shell add complexity without weighing down the wine’s bright profile. On the palate, it is medium-bodied, clean and finely textured, with a refreshing but notably mild, harmonious acidity for Chablis. Citrus and orchard fruit—think lemon, lime, and crisp pear—are wrapped in a distinct chalky minerality that gives the wine its backbone and length. The finish is linear and mouthwatering, with lingering notes of stone, salt and a touch of grapefruit pith. Enjoyable now for its precision and freshness, it should develop further complexity and roundness over the next 3–5 years under good cellaring conditions.

Production
The vineyards for this cuvée lie near the village of Fontenay-près-Chablis, in the heart of the Chablis region, where Chardonnay thrives on classic Kimmeridgian limestone and marl—soils rich in ancient marine fossils that give Chablis its signature mineral drive. Farmed organically (Bio), the vines are typically 15–25 years old, yielding fruit with both vibrancy and growing depth of character. Harvesting is carried out with careful selection to preserve acidity and purity, followed by gentle pressing. Fermentation takes place in temperature-controlled stainless steel tanks to protect the fresh, precise fruit profile, with aging on fine lees to add texture and subtle complexity, while deliberately avoiding heavy oak influence so that the terroir remains front and center.

Food & Serving
This organic Chablis is a natural partner for all kinds of seafood: oysters, mussels, prawns, sushi and sashimi, or simply grilled white fish with lemon and herbs. It also pairs beautifully with goat’s cheese, mild cow’s milk cheeses, light poultry dishes, and vegetable-focused plates such as asparagus, fennel or zucchini with olive oil and sea salt. Serve well-chilled but not icy, ideally around 9–11 °C (48–52 °F), to allow the aromas and minerality to open up. Decanting is not essential, but pouring the wine into a carafe 15–20 minutes before serving can help it unfold more aromatic nuance, especially in its youth.
