Tasting Notes
In the glass, the 2023 Fourchaume shows a pale lemon color with green highlights, youthful and bright, hinting at its freshness and energy. The nose opens with finely etched aromas of citrus zest, green apple and pear, wrapped in notes of white flowers, chalk dust and a subtle saline breeze. With air, more complexity emerges: hints of lemon curd, crushed oyster shell and a delicate touch of hazelnut from its élevage.
On the palate, this Premier Cru is precise and linear, with a vivid backbone of acidity that drives the wine from start to long, mineral finish. Flavors of lemon, lime and crisp orchard fruit are layered with nuances of wet stone, iodine and a fine, chalky grip that is very much Fourchaume. The texture is at once silky and tightly coiled, suggesting excellent aging potential: while it can be enjoyed in its youth for its vibrancy and clarity, it will reward 5–10 years in the cellar with added depth, creamier texture and more pronounced nutty, honeyed complexity.
Production
The Fourchaume Premier Cru lies on long, gently sloping hillsides on the right bank of the Serein River, where classic Kimmeridgian limestone and marl soils dominate—rich in marine fossils that give Chablis its distinctive marine, saline edge. The vines for this cuvée, planted between the 1940s and late 1980s, are organically farmed, limiting yields naturally and concentrating flavor. Harvest is carried out with great attention to ripeness and fruit health, often with careful sorting to preserve only the best bunches. In the cellar, the must is gently pressed and fermented at controlled temperatures to retain purity of fruit and terroir expression. Aging typically takes place in a mix of stainless steel (to preserve tension and freshness) and a restrained proportion of oak (to add texture and complexity without masking the mineral core), followed by time on fine lees to enhance mouthfeel and aromatic nuance before bottling.
Food & Serving
This Chablis 1er Cru Fourchaume Bio 2023 is a natural partner for the sea: think oysters, scallops, poached turbot, grilled sea bass or sushi and sashimi. It also shines with delicately prepared poultry in light cream or lemon sauces, veal blanquette, or fine vegetable dishes such as asparagus, fennel, or a goat cheese tart. Serve well chilled but not icy, ideally around 10–12°C (50–54°F) to allow the aromas and texture to fully unfold. Young bottles benefit from 30 minutes in a carafe or a few vigorous swirls in the glass to open the bouquet and soften the edges of its vibrant structure.
