With just 12.5% alcohol, it’s a wine that delivers intensity without heaviness, offering superb balance between ripe orchard fruit and racy acidity. Sourced from a parcel directly adjacent to the legendary holdings of Raveneau, this cuvée stands out for its refined structure, layered texture and long, saline finish.

Tasting Notes
In the glass, the 2023 Montée de Tonnerre is pale lemon to light gold with a brilliant, almost crystalline clarity. The nose opens with delicate notes of beeswax and honeysuckle, followed by crisp orchard fruits like green apple and pear, hints of white peach and a subtle chalky, limestone edge. As it aerates, more floral nuances emerge alongside a faint suggestion of citrus zest and wet stone. On the palate, the wine is medium to full-bodied for Chablis, showing a layered, concentrated core of orchard and stone fruit wrapped in vibrant, mouthwatering acidity. The texture is both silky and firm, driven by a strong chalky extract that gives definition and grip. Flavors of apple, pear and lemon curd are underscored by savory notes of crushed shell and light beeswax, leading into a persistent, juicy, saline finish. While already harmonious in its youth, the structure and acidity suggest very good aging potential over the next 8–10 years, gaining complexity, hazelnut nuances and more tertiary, honeyed tones with time in bottle.

Production
Montée de Tonnerre is one of Chablis’ great premier cru terroirs, facing the same hillside as the grands crus and rooted in classic Kimmeridgian limestone and marl, which gives the wine its hallmark tension and minerality. The Chardonnay grapes are harvested by hand to ensure optimal selection and preserve freshness, especially important in a concentrated, yet finely etched vintage like 2023. Vinification is deliberately sensitive: the wine is aged partly in older oak barrels (around 30%), which add texture and subtle complexity without overt wood flavor, and the remainder in stainless steel to safeguard purity and precision. The result is a Chablis that combines depth and richness with a clearly defined, mineral-driven frame.

Food & Serving
This Chablis 1er Cru pairs beautifully with refined seafood dishes such as oysters, scallops, langoustines, sushi and sashimi, or simply grilled white fish with a squeeze of lemon. It also shines with poultry in light cream or mushroom sauces, roast chicken with herbs, veal blanquette, and aged goat’s cheese or Comté. For best enjoyment, serve at 10–12°C (50–54°F). While it can be enjoyed straight after opening, a gentle 30–45 minutes in a decanter or in the glass allows the beeswax, floral and mineral notes to fully unfurl, especially in its youthful years.
