This cuvée, whose name translates to “behind the church,” evokes the intimate, tucked‑away vineyard plots that define many of Champagne’s most cherished sites. It balances precision and purity with a generous, fruit‑driven profile that will appeal to both seasoned Champagne lovers and curious explorers alike.

Tasting Notes
In the glass, Derrière l'Eglise 2021 shows a pale, shimmering salmon‑tinged gold, enlivened by a fine and persistent stream of bubbles. The nose is delicately expressive, with red apple skin, wild strawberry and raspberry coulis layered over notes of white flowers, citrus zest and a subtle chalky minerality that reminds you this is true Champagne. On the palate, the wine is lively yet poised, with a vibrant Pinot Noir core delivering crunchy red berry fruit, blood orange and a touch of stone fruit. The mousse is fine and creamy, supporting a precise spine of acidity that keeps everything fresh and mouthwatering. Underneath the fruit, saline and chalk notes provide depth and length, leading to a clean, gently spicy finish. Enjoyable now for its youthful energy, it should continue to evolve attractively over the next 3–5 years, gaining a little more breadth and complexity with time in bottle.

Derrière l'Eglise 2021 is sourced from Pinot Noir vines rooted in the chalk and limestone soils that define Champagne, with pockets of clay and sand adding nuance and texture. These well‑drained, mineral‑rich soils, coupled with a cool, northerly climate, allow the grapes to ripen slowly while preserving acidity and finesse. Harvesting is typically carried out by hand to ensure careful selection of bunches, protecting the fruit’s purity and integrity. In the cellar, the grapes are gently pressed to obtain clear, delicate juice, which is then fermented at controlled temperatures to retain aromatics. After the base wine is crafted, it undergoes secondary fermentation in bottle following the traditional méthode champenoise, with extended aging on the lees to build texture, complexity and a fine, persistent mousse before disgorgement and final dosage.
