Domaine Jean-Paul & Benoît Droin Chablis 2023 is a benchmark expression of unoaked Chardonnay from one of Chablis’ most respected family estates. Tasting Notes
In the glass, the 2023 Chablis shows a pale lemon color with green reflections, hinting at its youth and vibrancy. The nose is immediately inviting, with aromas of lemon zest, green apple and white flowers layered over a distinct chalky, seashell-like minerality. Subtle notes of lime, pear skin and a whisper of fresh thyme emerge with a bit of air.
On the palate, it is dry, sleek and finely etched, with a mouthwatering acidity that gives the wine lift and tension. At Domaine Jean-Paul & Benoît Droin, the vineyards are carefully managed with a focus on low yields and optimal ripeness, and harvesting is typically carried out by hand to ensure only healthy, perfectly ripe clusters are selected. In the cellar, the wine is vinified traditionally in stainless-steel tanks to protect the purity of the Chardonnay fruit and the expression of terroir, with temperature-controlled fermentation and aging on fine lees to add texture and subtle complexity, without masking the wine’s mineral-driven profile.
