Domaine Didier Dagueneau’s Blanc Fumé de Pouilly Silex is one of the Loire’s most distinctive Sauvignon Blancs, prized for its mineral intensity, precision, and unmistakable sense of place. Named for the flint-rich soils that define it, Silex is a wine built more on texture and structure than overt fruit, and it has long been regarded as a benchmark expression of Pouilly-Fumé.
Tasting Notes
In the glass, Silex typically shows a pale, luminous colour, hinting at its cool-climate freshness. The nose is restrained and finely etched rather than openly aromatic, with flinty smoke, lemon zest, and subtle savoury notes taking the lead.
On the palate, it is dry, taut, and tightly wound, with a firm line of acidity and a layered, almost tactile mineral core. The wine’s clay-and-flint terroir lends a subtle fleshiness at the outset before the structure tightens through the mid-palate. This is a wine that benefits greatly from time, and while approachable with careful decanting when young, it has excellent ageing potential and can evolve beautifully over many years.
Production
Silex comes from the flint-laced soils of Pouilly-Fumé in the Loire Valley, where Sauvignon Blanc develops a notably mineral, smoky profile. The vineyard’s terroir, shaped by clay and flint, is central to the wine’s identity, contributing both tension and depth. Harvest is typically carried out with great care to preserve purity and freshness, and vinification is focused on clarity, restraint, and expressing the site rather than overt oak influence.
Food & Serving
This is a superb match for seafood, especially oysters, scallops, sea bass, and grilled white fish, as well as goat’s cheese and dishes with subtle herbal or citrus elements. Serve chilled at around 10–12°C. A short decant can be beneficial when young to help the wine open up, but avoid over-aerating if you want to preserve its precision and tension.
