Tasting Notes
In the glass, Terres Chaudes 2022 shows a bright, medium-deep ruby colour with a youthful violet rim. The nose is immediately expressive, with red berries and cassis rising from the glass, followed by notes of roasted red pepper, subtle earthiness and fresh herbs that lend a gentle, almost ethereal dimension. With a bit of air, the fruit profile becomes lighter and more lifted, and a faintly creamy, lactic nuance emerges, a nod to the wine’s malolactic fermentation. On the palate, this Saumur-Champigny is surprisingly slender, tense and precise rather than opulent, emphasising finesse over power. Juicy redcurrant and blackcurrant fruit is framed by lively, harmonious acidity and fine-grained tannins, giving the wine a refreshing, mouth-watering structure. The earthy, herbal and spicy tones from the nose reappear in a long, linear finish that feels both energetic and elegant. Enjoyable in its youth for its vibrancy and purity, it also has the structure to evolve gracefully for 5–8 years in a good cellar, gaining further complexity and softness over time.

Production
The grapes for Terres Chaudes come from two distinct parcels: “Les Dares” in Chaintres, just south of Saumur, and “Poyeux” in Saumur itself – a site famed for producing some of the region’s most coveted Cabernet Franc, including wines from the legendary Clos Rougeard. The vines average around 45 years of age and are farmed organically, allowing the chalky tuffeau soils and temperate Loire climate to speak clearly in the wine. Harvesting is carried out by hand to ensure careful selection of perfectly ripe fruit. In the cellar, the grapes undergo partial destemming before fermentation, striking a balance between purity of fruit and gentle structure. The wine is then aged in large wooden vats (foudres), a choice that preserves freshness and varietal character while adding subtle textural polish without overt oak imprint. Malolactic fermentation softens the natural acidity and contributes to the wine’s silky, integrated profile.

Terres Chaudes 2022 is an excellent partner for dishes that highlight its bright fruit and savoury, herbal complexity. Think charcuterie, roast chicken with thyme, grilled pork, lamb chops with rosemary, or classic French bistro fare such as steak-frites. It also pairs beautifully with grilled vegetables, ratatouille, lentil dishes and semi-hard cheeses like Tomme or aged goat cheese. Serve at 14–16°C to emphasise freshness and aromatic lift. A brief decant of 30–45 minutes is recommended in its youth to let the wine open up and reveal its full spectrum of fruit and spice; older bottles can be served directly after a gentle splash into a carafe.
