Domaine des Roches Neuves La Marginale Saumur-Champigny Bio 2020 is a striking expression of Cabernet Franc from one of the Loire Valley’s most revered biodynamic estates. Tasting Notes
In the glass, La Marginale 2020 displays a deep, vibrant ruby colour with violet highlights, hinting at both concentration and freshness. The nose is complex and slowly unfurls: dark plum and black cherry mingle with crushed blackcurrant, followed by a lifted herbal dimension of sage and mint, and a cool, peppery spice. Subtle floral notes, graphite and a touch of wet stone underline the wine’s limestone origin. On the palate, the wine is precise and elongated rather than heavy, with a core of dark, pure fruit wrapped in fine, chalky tannins. The peppery and herbal notes add savoury definition, balanced by a mouth-watering acidity that keeps everything focused and energetic. With air, the fruit becomes brighter and more red-toned, while the initially wild spice tones knit into a more seamless, complex whole. This is a Cabernet Franc built for patience: while already impressive with a good decant, it will benefit from 5–10 years in the cellar and has the structure to age gracefully beyond that in good conditions.

Production
La Marginale is drawn from two prime, limestone-rich parcels: Fossés de Chaintré and one of the oldest plots in the famed Les Poyeux vineyard, both in the heart of Saumur-Champigny. The vines, farmed biodynamically, are cultivated with meticulous care, low yields and manual work in the vineyard to preserve biodiversity and maximise fruit quality. Grapes are harvested by hand at optimal ripeness and rigorously sorted. Vinification is gentle and precise, allowing Cabernet Franc to express its purity rather than extraction. The 2020 was matured for around a year in a single large 2,500-litre Stockinger foudre, custom-built in the estate’s own cellar, before being moved into seasoned Burgundy barrels (around three years old) for further élevage. This approach brings texture and refinement without masking the wine’s mineral backbone.

Food & Serving
La Marginale 2020 is superb with refined, savoury dishes: think roast lamb with herbs, pigeon or duck breast, veal chops, or slow-cooked beef cheeks. It also pairs beautifully with mushroom-based dishes, lentil stews, and aged cow’s milk cheeses such as Comté or Tomme, as well as semi-hard goat cheeses from the Loire. Serve at 15–16°C to highlight its freshness and aromatic complexity. Decant for 1–2 hours in its youth to allow the wine to open and soften; older bottles will need a gentler, shorter decant just to remove sediment.

Thierry Germain’s Domaine des Roches Neuves, based in Varrains in Saumur-Champigny, is one of the Loire Valley’s reference estates for Cabernet Franc. Originally from Bordeaux, Germain took over the domaine in the early 1990s and gradually converted it to organic and then full biodynamic farming, becoming a pioneer of living soils and low-intervention viticulture in the region. His wines, including La Marginale, are celebrated for their precision, transparency and elegance, and have helped redefine what Saumur-Champigny can be on the world stage. Regularly praised by international critics and sommeliers, Domaine des Roches Neuves is now regarded as one of the Loire’s elite, with La Marginale standing as a flagship cuvée that captures both the estate’s philosophy and the unique limestone terroir of Saumur.
