Tasting Notes
In the glass, the 2016 Corton Les Grèves shows a deep, shimmering ruby core with garnet highlights at the rim, reflecting both concentration and youthful vibrancy. The nose opens slowly but purposefully, revealing layers of wild cherry, black raspberry and ripe red plum, wrapped in notes of violet, rose petal and subtle peony. As it evolves, more savory and mineral tones emerge: crushed stone, forest floor, fine spice, a hint of cedar and a delicate touch of smoked tea. On the palate, this is a firmly structured yet supremely elegant Grand Cru. Silky, finely woven tannins frame a core of pure red and dark berry fruit, with accents of blood orange, licorice, dried herbs and a chalky, saline minerality that is very much Corton. The acidity is fresh and linear, giving the wine lift and precision, while the finish is long, layered and slightly savory, suggesting years of positive evolution ahead. While already harmonious with aeration, the 2016 vintage has the stuffing to age gracefully for 10–20 years in a good cellar, gradually gaining tertiary nuances of truffle, sous-bois and leather.

Production
Les Grèves is one of the choicest parcels on the Corton hill, with well-drained, limestone-rich soils mixed with clay and small stones that naturally restrict yields and intensify flavor. Domaine Des Croix works these vines with great care, following a largely sustainable, often organic philosophy, with a strong emphasis on careful canopy management and manual work in the vineyard. Harvesting is done by hand, allowing strict selection of perfectly ripe Pinot Noir bunches—especially crucial in 2016, a year marked by frost and naturally low yields that concentrated both fruit and structure. In the cellar, gentle extraction, a judicious use of whole clusters and fermentation in small vats preserve aromatic purity and texture. Élevage takes place in French oak barrels (with a measured proportion of new oak), allowing the wine to gain depth and complexity without overshadowing the clarity of the Corton terroir.

Food & Serving
This Corton Les Grèves Grand Cru 2016 is a superb partner for refined, flavor-driven dishes such as roast duck with cherry or plum, pigeon, venison loin, or slow-braised beef cheeks. It also pairs beautifully with earthy accompaniments—morel mushrooms, truffle risotto, roast root vegetables—and mature, semi-soft cheeses like Époisses or Langres. For optimal enjoyment, serve at 15–16°C (59–61°F). In its youth, decant for 1–2 hours to allow the aromatics and texture to fully unfurl; with more bottle age, a gentle splash decant just before serving is sufficient to remove any sediment and let the wine open gracefully.
