Domaine des Amiel À Peïssou Bio 2018 is a vibrant, biodynamic red from the sun‑drenched hills of Languedoc, crafted from Grenache Noir and Syrah. Named after the clarinet‑playing great‑grandfather nicknamed “Peïssou” (“little fish”), this cuvée captures his joyful, free‑spirited character in the glass. Made as a true natural wine—unsulphured and unfiltered—it delivers purity, personality and serious drinkability without ever feeling challenging or austere.

Tasting Notes
In the glass, À Peïssou Bio 2018 shows a deep, vivid ruby colour with purple highlights, hinting at its youthful energy and generous fruit. The nose opens with an intense cassis note, followed by a medley of dark red fruits—blackberry, black cherry and ripe plum—wrapped in subtle spice. Gentle hints of black pepper, dried herbs and a touch of yogurt-like creaminess mingle with a faintly wild, animal note, adding complexity without overshadowing the fruit. On the palate, the wine is juicy, harmonious and wonderfully approachable. The dark fruit core is dense yet lively, with cassis and berry compote leading the way, supported by fine‑grained tannins that give structure without any harshness. A discreet, shaping acidity keeps everything fresh and buoyant, making the wine feel light on its feet despite its depth of flavor. The unsulphured, unfiltered style brings a sense of immediacy and liveliness—this is a wine meant to be enjoyed in its exuberant youth, though it can comfortably evolve and gain nuance over the next few years.

Domaine des Amiel farms its Languedoc vineyards biodynamically, working with living soils and native vegetation in a warm Mediterranean climate tempered by cooling breezes. The Grenache Noir and Syrah for À Peïssou are typically hand‑harvested at optimal ripeness, with careful selection in the vineyard to ensure only healthy, concentrated berries make it to the cellar. Fermentation proceeds with indigenous yeasts, reflecting the estate’s minimal‑intervention philosophy, and the wine is crafted without added sulfur and left unfiltered to preserve texture and aromatic detail. Gentle extraction and a considered élevage—often in neutral vessels—aim to showcase fruit purity, energy and terroir rather than oak influence.

À Peïssou Bio 2018 is a joyful table companion for Mediterranean‑inspired cuisine: think grilled lamb chops with herbs, spicy merguez sausages, charcuterie, ratatouille, or a hearty lentil and roasted vegetable stew. It also works beautifully with tapas, pizza with cured meats, or simply a platter of aged hard cheeses. Serve at 15–17°C (cool to just below room temperature) to emphasize freshness and aromatics. Domaine des Amiel is a family‑run estate in Languedoc, now led by brothers Aymeric and Jordan, who have transformed the domaine into a reference point for biodynamic and natural wine in the region. Building on generations of family farming, they embraced a radical shift toward organic and biodynamic practices, eschewing chemical inputs and championing living soils and biodiversity. In the cellar they work with native yeasts, minimal intervention and, for cuvées like À Peïssou, no added sulfur and no filtration. Their wines are increasingly recognized for marrying authenticity and purity with sheer drinkability—proof that natural wines from Languedoc can be both characterful and utterly joyful to drink.
