Tasting Notes
Pale straw in the glass with a bright, crystalline sheen. The nose is classic Chablis: lemon zest, green apple, white flowers, and a distinct chalky, flinty edge, with subtle hints of oyster shell and wet stone. On the palate, it is focused and elegant, with vibrant acidity carrying flavors of citrus, pear, and fresh orchard fruit through a long, saline finish. The texture is refined rather than heavy, giving the wine excellent balance and the ability to age gracefully for several years, developing more honeyed, smoky, and complex mineral notes with time.

Production
Côte de Lechet is a steep premier cru vineyard on the left bank of the Serein, where Kimmeridgian limestone and clay soils lend the wine its hallmark tension and minerality. The 2023 vintage was harvested from Chardonnay vines grown in this cool-climate terroir, likely picked with care to preserve freshness and precision. Vinification is geared toward protecting the purity of the fruit and the vineyard expression, resulting in a clean, terroir-focused Chablis with clarity and finesse.

Food & Serving
An excellent match for oysters, shellfish, grilled white fish, sushi, and lightly creamy poultry dishes. Serve chilled at around 10–12°C, and decanting is generally not necessary, though a brief aeration can help open the wine if enjoyed young.
