Tasting Notes
In the glass, the 2021 Les Taillepieds shows a luminous, translucent ruby color, typical of refined Volnay Pinot Noir. The nose is lifted and precise, with red berries at the core—wild strawberry, red cherry and raspberry—interwoven with rose petals, violets, a hint of orange zest, and delicate notes of crushed stone and subtle spice.
On the palate, the wine is ultra-fine and linear, driven more by tension and minerality than by sheer weight. Juicy red fruits are wrapped in taut, chalky tannins, with nuances of tea leaf, forest floor and a touch of savory spice emerging with air. The finish is long, vibrant and saline, leaving a lingering impression of purity and detail. While already graceful in its youth, this 2021 has the structure and acidity to evolve beautifully over 8–15 years, gaining complexity and silkiness with time in bottle.
Production
Les Taillepieds is one of Volnay’s steepest and most revered Premier Cru sites, its name often linked to the sharp, stony soils that have historically ‘cut the feet’ of workers on the slope. The vineyard lies on well-drained, limestone-rich marl with a high proportion of stones, which naturally limits vigor and produces small, concentrated Pinot Noir berries. At Domaine de Montille, organic and biodynamic farming practices are the norm, with careful hand-harvesting to ensure only perfectly ripe, healthy grapes reach the cellar. Vinification typically favors whole-bunch fermentation in varying proportions depending on the vintage, bringing aromatic lift and fine-grained tannic structure, followed by élevage in French oak barrels (with a judicious use of new oak) to preserve the wine’s precision, minerality and sense of place.
Food & Serving
This Volnay 1er Cru Les Taillepieds pairs beautifully with refined, subtly prepared dishes that echo its elegance: roast poultry (especially guinea fowl or chicken with wild mushrooms), veal in light jus, duck breast, pigeon, or pork tenderloin with herbs. It also shines alongside mushroom risotto, truffled dishes, and aged but not overly powerful cheeses such as Comté or Tomme. Serve at 14–16°C (57–61°F) to highlight its aromatic complexity and freshness. Decanting for 30–60 minutes in its youth can help the wine unfold and soften the tannins; for older bottles, a gentle splash-decant just before serving is recommended.
