Domaine de la Cras Marc Soyard Bourgogne Blanc Monopole Cras 2022 is a striking, terroir-driven Chardonnay from the northern reaches of Burgundy, just outside Dijon. Farmed and vinified by the meticulous and much-talked-about vigneron Marc Soyard, this is a rare monopole bottling from a single, organically tended estate vineyard. Tasting Notes
In the glass, Monopole Cras 2022 shows a pale lemon color with subtle green reflections, hinting at its freshness and youthful intensity. The nose opens with bright citrus—lemon zest and grapefruit—layered over green apple, white peach, and a delicate floral lift. With air, more complexity unfolds: crushed chalk, wet stone, a touch of fresh hazelnut and a whisper of fine, well-integrated oak.
On the palate, the wine is taut and energetic, with a precise, linear structure that carries flavors of citrus, crunchy orchard fruit and a saline mineral core. There is a lovely tension between ripeness and razor-sharp acidity, giving the wine both texture and cut. Subtle notes of brioche and almond appear on the long, mouthwatering finish, suggesting careful élevage rather than overt wood. While already highly enjoyable in its youth, the 2022 has the structure and acidity to evolve gracefully over the next 5–8 years, gaining more depth, creaminess and complexity with time in bottle.
Production
The Monopole Cras vineyard sits on limestone-rich soils with clay and marl, just southwest of Dijon, at relatively high altitude for Burgundy. This cool, stony terroir naturally lends itself to wines of tension and mineral definition. Marc Soyard farms the estate with organic principles and a strong focus on biodiversity, keeping yields low to concentrate flavor and terroir expression. Harvest is carried out by hand, with meticulous sorting of the grapes both in the vineyard and at the winery. Vinification is deliberately low-intervention: the Chardonnay is gently pressed, then fermented with indigenous yeasts, often in a mix of stainless steel and older barrels to preserve purity while adding textural nuance. Aging on fine lees, with minimal bâtonnage and judicious use of sulfur, helps build complexity and mouthfeel without sacrificing the wine’s precision and freshness.
Food & Serving
This Bourgogne Blanc is a natural match for refined yet simply prepared dishes that let its minerality shine: think oysters, scallops, grilled prawns, or lightly poached white fish with beurre blanc. It also pairs beautifully with roast chicken, veal in a light cream sauce, vegetable risottos, and soft cheeses such as Brie, Chaource or young Comté. Serve at 10–12°C (50–54°F) to highlight its aromatics and lively acidity; slightly cooler if you prefer more tension, slightly warmer for greater generosity and texture. A brief decant of 20–30 minutes, or opening the bottle in advance, can help the wine unfurl its more subtle floral, nutty and savory notes.
Producer
Marc Soyard took over Domaine de la Cras in 2013, when the city of Dijon entrusted him with managing its nearby estate vineyard—an unusual arrangement that has since become a modern Burgundy success story. Working essentially as a one-man band in the early years, Soyard quickly earned a reputation for intense, artisanal farming and minimal-intervention winemaking, bringing a level of ambition to the Dijon hills more commonly associated with the Côte de Beaune and Côte de Nuits. His wines from Domaine de la Cras have helped put this overlooked corner of Burgundy on the map, showing that with low yields, conscientious organic viticulture and sensitive cellar work, the terroirs around Dijon can produce Chardonnay and Pinot Noir of real distinction. Today, Marc Soyard is considered one of the key figures in redefining the northern limits of great Burgundy, with the Monopole Cras bottlings standing as the flagship of his work.
