Tasting Notes
In the glass, the 2017 Galichets shows a bright, medium ruby color with subtle garnet reflections at the rim, hinting at a wine entering its perfect drinking window. The nose is immediately inviting: ripe red and blackcurrants, wild raspberry, and morello cherry are layered with graphite, crushed violets, dried herbs, and a touch of cedar and tobacco leaf—classic, pure Cabernet Franc from the Loire.
On the palate, this is medium-bodied with a precise, linear structure and finely grained tannins. Juicy red fruit and cassis are wrapped in notes of pencil shavings, earthy minerality, and a gentle peppery lift. Production
The ‘Galichets’ cuvée comes from the gravelly and sandy terraces of Bourgueil, a terroir that naturally promotes elegance, aromatic lift, and refined tannins in Cabernet Franc. Domaine de la Chevalerie works organically (and effectively biodynamically in spirit), with careful work in the vineyard to keep yields modest and fruit perfectly healthy. Grapes are harvested by hand at optimal ripeness, with strict sorting to preserve only the best berries. In the cellar, fermentation takes place with a gentle extraction to highlight finesse over power, often with indigenous yeasts to respect the character of the vintage. The wine is then aged—traditionally in large, neutral vessels and/or older barrels—allowing the texture to soften and the aromatics to knit without overt oak influence, retaining purity and a clear expression of Bourgueil’s gravel soils.
Food & Serving
This Bourgueil is a versatile food wine, ideal with roast poultry (especially duck), grilled pork chops, charcuterie, and classic bistro dishes like steak-frites. It also shines alongside lamb cutlets, mushroom-based dishes, and semi-hard cheeses such as Comté, Tomme, or aged goat’s cheese from the Loire. Serve at 15–17°C to highlight its freshness and aromatics. A brief decant of 30–45 minutes can help the wine open up, especially if enjoyed on the younger side, but extended decanting is not necessary; simply opening the bottle ahead of the meal is often enough.
