This red Burgundy marries dark, refined fruit with the domaine’s hallmark precision, offering a wine that is both immediately captivating and built to age. Drawn from the fabled Bonnes-Mares vineyard straddling Chambolle-Musigny and Morey-Saint-Denis, it showcases the tension between elegance and structure that collectors prize.

Tasting Notes
In the glass, the 2018 Bonnes-Mares shows a deep, vibrant ruby color with a youthful, almost electric sheen that hints at its concentration and longevity. The nose is detailed and open-knit, with aromas of blackberry and black cherry layered over briar, crushed chalk and subtle floral tones of violet. Hints of wild herbs and a faint ferrous note emerge with air, adding a mineral complexity rather than overt opulence. On the palate, this is firmly structured yet finely etched, with chalky, tightly woven tannins framing crisp dark fruit. Blackberries and blackcurrants are underscored by savory spice, earth and a saline, stony edge that speaks clearly of Bonnes-Mares’ limestone-rich soils. The finish is long, controlled and currently a touch reserved, suggesting that while the wine is already impressive, it is still knitting together and will gain in nuance over time. With proper cellaring, this 2018 has the potential to evolve gracefully for 15–25 years, shedding some of its youthful firmness in favor of greater aromatic complexity and silkier texture.

Production
Sourced from the prestigious Bonnes-Mares Grand Cru, where clay-limestone and pockets of marl give Pinot Noir its characteristic depth and mineral backbone, this wine reflects the unique tension of the site: power from the heavier soils and finesse from the higher, more limestone-influenced parcels. The vines are hand-harvested at optimal ripeness to preserve freshness and precision, with meticulous sorting in the vineyard and at the winery to retain only pristine fruit. Traditional Burgundian vinification is employed, with fermentation in open vats and careful extraction to respect the natural structure of the vintage rather than force it. The wine is then matured in French oak barrels, a proportion of which is new, allowing the wood to shape and polish the tannins while keeping the purity of fruit and terroir at the forefront.

Food & Serving
This Grand Cru’s depth and structure make it a superb partner for richly flavored dishes such as roasted duck, pigeon, or squab, as well as lamb racks with herb crusts and game birds in mushroom jus. It also pairs beautifully with dishes featuring black truffle, wild mushroom risotto, or simply prepared, high-quality cuts of beef where the wine’s minerality can shine alongside the meat’s savory character. Serve at 15–17°C (59–63°F) to highlight its aromatic detail and balance. Decant gently for 1–2 hours in its youth to soften the chalky tannins and release the floral and mineral nuances; older bottles will require a shorter, more delicate decanting, primarily to remove any sediment.
