In the glass, the 2022 Fourchaume is a bright, pale straw with green reflections, signaling both freshness and youth. The nose opens with lifted aromas of lemon zest, green apple, and white peach, layered with chalk dust, oyster shell, and a gentle floral note of acacia and hawthorn. Subtle hints of almond, fresh butter, and a touch of flint emerge with air, giving a sense of both refinement and depth.
On the palate, the wine is precise and vibrant, with a sleek, saline backbone that is very true to Chablis. Lively citrus, crunchy orchard fruit, and a touch of ripe stone fruit are carried on a spine of mouthwatering acidity, while the texture is elegantly rounded by a discreet creaminess from lees aging. Production
Fourchaume is one of the most celebrated Premier Crus of Chablis, lying on the right bank of the Serein River, where south and south-west facing slopes catch generous sunlight while deep Kimmeridgian limestone and marl soils deliver the region’s hallmark chalky minerality. At Domaine Bessin-Tremblay, the vines are tended with great care, using sustainable, low-intervention farming and predominantly manual work in the vineyard to ensure optimal grape quality. Harvest is carried out by hand to allow strict selection of the healthiest, perfectly ripe Chardonnay bunches. In the cellar, the must is gently pressed, followed by a cool, natural fermentation—often with indigenous yeasts—in stainless steel and large neutral oak, depending on the cuvée. The wine then rests on its fine lees for an extended period, with minimal bâtonnage, preserving precision while building texture and complexity before bottling.

This Chablis 1er Cru Fourchaume 2022 shines alongside classic seafood pairings such as oysters, scallops, grilled langoustines, and shellfish platters, as well as simply prepared white fish with beurre blanc or citrus butter. It also pairs beautifully with sushi and sashimi, goat’s cheese, light poultry dishes, and vegetable preparations featuring fennel, asparagus, or fresh herbs.
