Crafted from 100% Pinot Noir, it combines vivid fruit with a supple, textural palate that reflects its clay-rich soils. This is a classic yet characterful Premier Cru, offering both immediate charm and the structure to evolve beautifully in bottle.

Tasting Notes
In the glass, the 2022 Les Boucherottes shows a luminous ruby to deep garnet hue, with youthful clarity and brightness at the rim. The nose is pure and expressive: bright red cherry, pomegranate, and wild raspberry lead, layered with hints of baking spice, subtle clove, dried rose petals, and a gentle earthy undertone that speaks of Burgundy’s limestone-clay terroir. On the palate, the wine is medium-bodied, finely poised, and silky, with velvety tannins framing the juicy red-fruit core. Notes of cherry and raspberry are joined by a touch of cranberry and a discreet savoury nuance, carried by a precise mineral thread that runs from mid-palate through to the long, balanced finish. The acidity is fresh but harmonious, giving lift without sharpness. Enjoyable in its youth for its fragrance and texture, this 2022 has the structure and balance to age gracefully over the next 8–12 years, gaining complexity and a more pronounced earthy, truffled character with time in the cellar.

Production
Les Boucherottes is a well-regarded Premier Cru on the southern side of Beaune, bordering the commune of Pommard, where deeper clay and limestone-marl soils give wines a touch more depth and structure than many Beaune climats. The Pinot Noir is typically harvested by hand to ensure careful selection of bunches in the vineyard, often from relatively low-yielding vines to concentrate flavour and character. In the cellar, the grapes are usually destemmed predominantly or entirely, followed by a gentle, temperature-controlled fermentation to preserve aromatic purity. Extraction is handled with care—via pump-overs and/or punch-downs—to obtain fine, velvety tannins rather than overt power. The wine is then aged in French oak barrels (with a measured proportion of new oak), allowing the spice, texture, and structure to integrate while keeping the clear imprint of Beaune’s terroir front and centre.

Food & Serving
This Premier Cru Beaune is a versatile and food-friendly Pinot Noir, pairing beautifully with roast chicken, duck breast, pork tenderloin, veal, or herb-crusted lamb, as well as mushroom risotto, game birds, and dishes featuring truffle or root vegetables. It also complements semi-soft cheeses such as Comté, Morbier, and Tomme. Serve at 15–16°C (59–61°F) to highlight its aromatic detail and freshness. For optimal expression, open the bottle 30–45 minutes before serving; a gentle decant for young bottles can help the wine unfurl its floral, red-fruited and mineral nuances without losing finesse.
