Dom Pérignon Rosé P2 1995 captures the rare second life of an exceptional vintage, released only after long maturation in the cellar. This Plénitude 2 expression shows the signature Dom Pérignon depth and precision, with the added complexity and energy that come from extended aging.

Tasting Notes
In the glass, it presents the poised brilliance expected of a mature prestige rosé, with a refined depth of color and elegant texture. The nose opens with vivid cherry and violet, then unfolds into subtle notes of rye, praline, and a delicate smoky thread. The palate is beautifully integrated, elegant yet substantial, with a broad, almost meaty presence and a seamless sense of balance. It finishes soft and exotic, with the layered intensity and length that mark P2 as a wine built for memorable drinking now, while still offering further complexity over time.

Production
Crafted in Champagne from Chardonnay and Pinot Noir, this 1995 vintage spent at least 12 years slowly transforming in the cellars before being released as Plénitude 2. That extended élevage allows the wine to reach a later stage of expression, where freshness, texture, and aromatic depth come together with remarkable intensity.

Food & Serving
Best served well chilled at around 8–10°C, this champagne is ideal with refined dishes such as lobster, tuna, duck breast, salmon, or dishes with subtle spice and umami. Decanting is generally not recommended for Champagne, though a brief rest in the glass can help the wine reveal its full aromatic range.
