Dom Pérignon P2 2006 is a richly layered prestige Champagne from Moët & Chandon, crafted from the outstanding 2006 vintage and released after extended maturation to reveal remarkable depth and precision. As a late-disgorged expression, P2 showcases the house’s pursuit of energy, intensity, and complexity, with a historical connection to the iconic legacy of Dom Pérignon and its long-standing status at the pinnacle of Champagne.
Tasting Notes
In the glass, it typically shows a luminous golden hue with a fine, persistent mousse. The nose is expressive and evolving, often opening with citrus peel, white flowers, toasted brioche, almond, and subtle chalky minerality, followed by notes of dried fruit, honeyed spice, and smoky nuances from extended aging.
On the palate, it is expansive yet incredibly focused, combining ripe orchard fruit, grapefruit, pastry, hazelnut, and saline freshness with a powerful, taut structure. The finish is long, precise, and deeply resonant. Thanks to its extended lees aging and P2 release style, this wine has excellent aging potential and can continue to develop beautifully for many more years.
Production
Sourced from selected Grand and Premier Cru sites across Champagne, Dom Pérignon is built around the character of the vintage, with the 2006 harvest delivering generous ripeness balanced by freshness. P2 (“Plénitude 2”) reflects a second phase of maturation on the lees, allowing the wine to gain complexity, texture, and vibrancy before release. Vinification follows the house’s meticulous Champagne method, with long cellar aging being central to the final style.
Food & Serving
Excellent with refined dishes such as lobster, scallops, caviar, turbot, roast chicken with morels, or aged Comté and Parmesan. Serve well chilled at around 8–10°C. Decanting is not necessary, but allowing the wine a little time in the glass can help it open and reveal its full aromatic range.
