The 2012 vintage stands out as one of the most highly regarded recent harvests, shaped by a difficult growing season that ultimately delivered outstanding fruit and remarkable finesse.

Tasting Notes
In the glass, Dom Pérignon 2012 shows a refined, luminous golden hue with a fine, persistent mousse. The nose is layered and expressive, opening with green apple, pear and citrus before unfolding into notes of toast, almonds, subtle spice and a distinct mineral edge. The palate is full yet precise, with vibrant acidity balanced by a creamy, silky texture. Flavours of stone fruit, lemon zest and delicate brioche lead into a long, elegant finish. While it is already impressive now, it has the structure and depth to evolve beautifully over the next 10 to 15 years.

Production
Dom Pérignon 2012 is crafted from a carefully balanced blend of Chardonnay and Pinot Noir, typically in near-equal proportions, sourced from selected vineyards in Champagne. The 2012 growing season was challenging, with frost, hail and a wet early summer, but a warm, dry late summer allowed the grapes to reach excellent quality. After the traditional secondary fermentation in bottle, the wine is matured on the lees for at least eight years, adding depth, texture and complexity.

Food & Serving
This Champagne works beautifully as an aperitif, but it also shines with seafood, shellfish, delicate fish dishes and elegant poultry preparations. Serve chilled at 8–10°C, and consider a short decant only if you want to soften its youth and let the aromatics open further, though this is not essential.
