Tasting Notes
In the glass, it shows a refined, luminous golden hue with a persistent, delicate mousse. The nose is elegant and layered, opening with citrus, green apple, and white flowers before unfolding into notes of almond, brioche, and subtle mineral nuances. On the palate, the wine is vibrant and precise, with crisp acidity, a creamy texture, and a long, mineral-driven finish. Its structure and energy give it both immediate appeal and excellent aging potential, with the ability to evolve beautifully over the next 15–20 years.

Production
Dom Pérignon 2008 is crafted in Champagne from Chardonnay and Pinot Noir, sourced from a cool vintage that ended with a sunny ripening period, allowing the grapes to reach excellent maturity while preserving high acidity. The blend is nearly even, emphasizing the freshness and tension of Chardonnay alongside the structure and depth of Pinot Noir. It matured for at least nine years on the lees in bottle, contributing to its complexity, texture, and finesse.

Food & Serving
This champagne is an excellent match for oysters, lobster, scallops, and refined poultry dishes, especially those prepared with subtle sauces or delicate seasoning. Serve chilled at 8–10°C to preserve its freshness and aromatic detail. Decanting is generally not necessary, though a short rest in the glass can help the wine open up beautifully.
