Dipoli Fihl Merlot 2021

Dipoli Fihl Merlot is a stylish, terroir-driven red from Trentino-Alto Adige that shows how expressive Merlot can be in northern Italy. Made from 100% Merlot and shaped by a careful mix of steel, barrique, and concrete aging, it offers a polished balance of fruit, freshness, and regional character. Its name also nods to the old designation of a village north of Egna, giving the wine a quiet historical link to its place of origin.

Tasting Notes
In the glass, it shows an intense ruby-red color with violet reflections, immediately suggesting youthful energy and ripe fruit. The nose is lifted and inviting, with aromas of small berries, subtle eucalyptus, and forest floor, followed by a touch of cocoa that adds depth and complexity. On the palate, it is pleasantly smooth and approachable, with juicy fruit at the core and a supple texture that makes it easy to enjoy. The finish lingers with gentle cocoa notes and a clean, fruit-forward impression. While already very attractive now, it should continue to drink well over the next few years as the wine settles and integrates further.

Production
The grapes come from Trentino-Alto Adige, a region known for its cool-climate precision and ability to preserve freshness in red wines. After destemming, the wine ferments for around ten days in open stainless-steel tanks, allowing a controlled extraction of color and aroma. Once malolactic fermentation is complete, it matures in one- or two-use barriques, then spends an additional four months in concrete casks before bottling, a sequence that helps refine texture while keeping the fruit expressive.

Food & Serving
This Merlot is a natural match for roasted poultry, grilled meats, veal, mushroom dishes, and pasta with rich tomato-based sauces. It also pairs well with aged cheeses or hearty vegetable dishes. Serve it at around 16–18°C, and decanting is optional but can help open up the aromas if the wine is enjoyed young.
