Sourced from the distinctive Petrignano parcel, where limestone outcrops and poor, rocky soils naturally limit yields, this wine offers impressive depth, precision, and personality. As part of the modern wave of site-specific Chianti Classico crus, Petrignano showcases how carefully chosen terroir can elevate Sangiovese from delicious to truly distinctive.

Tasting Notes
In the glass, Petrignano 2021 shows a vibrant, medium-deep ruby color with garnet highlights at the rim, hinting at its classical, terroir-driven style. The nose is refined yet expressive, with aromas of red cherry, wild strawberry, dried rose petals, and blood orange peel layered over notes of crushed stone, fresh tobacco leaf, and a subtle hint of spice and cedar. On the palate, the wine is focused and elegant rather than opulent, with juicy red fruit framed by lively acidity and fine, chalk-dusted tannins. Flavors of sour cherry, pomegranate, and plum mingle with savory tones of herbs, tea leaf, and earth, all carried by a distinctly mineral backbone that reflects the limestone-rich soils of Petrignano. The finish is long, mouthwatering, and delicately saline, suggesting very good aging potential. Enjoyable now with a bit of air, it should evolve gracefully over the next 8–12 years, gaining complexity and softness while retaining its freshness.

Production
The Petrignano vineyard sits around 330 meters above sea level, on soils rich in stones and limestone outcrops typical of the Monte Morello geological formation. This poor, well-drained soil, combined with good elevation and exposure, naturally restricts vigor and encourages the roots of Sangiovese vines to dig deep, concentrating flavor and structure in the grapes. Harvest is typically done by hand to ensure careful selection of bunches at optimal ripeness. In the cellar, Dievole favors a gentle, minimally interventionist approach: the Sangiovese is fermented with temperature control to preserve aromatic purity, followed by maturation in large neutral oak or traditional vessels to polish the tannins and allow the vineyard character—its mineral edge, tension, and elegance—to take center stage.

Food & Serving
This Chianti Classico is a natural partner for classic Tuscan cuisine: think bistecca alla fiorentina, grilled lamb chops with rosemary, roasted pork with fennel, or pappardelle al ragù di cinghiale (wild boar ragù). It also works beautifully with aged pecorino, mushroom dishes, and herb-roasted chicken. Serve at 16–18°C (60–64°F) to highlight its aromatic detail and freshness. Decanting for 30–60 minutes before serving will help the wine open up, especially in its youth, softening the tannins and allowing the floral and mineral notes to fully emerge.
