Diebolt-Vallois Fleur de Passion in magnum is one of the Côte des Blancs’ most admired blanc de blancs Champagnes, capturing the purity and tension of old-vine Chardonnay in an especially refined, ageworthy style. Drawn from some of the estate’s finest parcels in Cramant and bottled in large format, this cuvée offers both immediate pleasure and impressive cellaring potential. The 2010/2012 release reflects the house’s dedication to traditional craftsmanship, long lees aging and restrained dosage, resulting in a Champagne of precision, depth and elegance.

Tasting Notes
In the glass, Fleur de Passion shows a luminous, pale golden hue with fine, persistent bubbles that form a delicate mousse. The nose is intricate and layered, opening with notes of lemon zest, white flowers and chalky minerality, followed by hints of ripe pear, brioche, toasted hazelnut and a subtle touch of vanilla and cream from extended lees aging. On the palate, this is a precise yet generous Champagne: taut citrus and green apple are wrapped in a silky, mouth-coating texture, with vibrant acidity and a distinctly chalky, saline backbone that speaks clearly of Cramant’s grand terroir. Nuances of pastry cream, roasted almonds and light spice add complexity as the wine unfolds in the glass. The magnum format enhances freshness and longevity; properly stored, this wine can comfortably evolve and gain further complexity over the next 10–15 years or more, developing deeper brioche, honeyed and nutty notes with time.

Production
Fleur de Passion is sourced primarily from old-vine Chardonnay in the chalk-rich slopes of Cramant in the Côte des Blancs, one of Champagne’s most prized grand cru villages. The deep, pure chalk subsoil lends the wine its trademark tension, minerality and finesse. Grapes are harvested by hand at optimal ripeness to preserve both aromatic intensity and natural acidity. In the cellar, the must is traditionally fermented—often in older oak barrels to add subtle texture rather than overt wood character—without malolactic fermentation, in order to safeguard freshness and linearity. The wine then spends an extended period aging on its lees in bottle before disgorgement, with a low dosage to allow the terroir and vintage character to shine through.

Food & Serving
This refined blanc de blancs is superb with delicate, high-quality seafood: think oysters, scallop carpaccio, turbot with beurre blanc, or lobster with a light citrus butter sauce. It also pairs beautifully with caviar, sushi and sashimi, fine goat’s cheese, or simple dishes highlighting seasonal vegetables and fresh herbs. Serve well-chilled but not icy, ideally around 9–11 °C (48–52 °F), to allow the aromatics and texture to fully express themselves. A magnum can benefit from 20–30 minutes in an ice bucket before serving, and a brief, gentle aeration in the glass—rather than formal decanting—is generally sufficient for the wine to open up.
