Dettori is renowned for working organically and along natural, low‑intervention lines in the vineyard, with yields kept modest and harvest carried out by hand to ensure only perfectly ripe, healthy bunches are selected. In the cellar, the philosophy is similarly minimalist: native yeasts, no enzymes, no corrections, and a patient, slow vinification that respects the raw material. Fermentation typically takes place in neutral vessels (such as concrete or old large casks) to avoid masking the fruit and terroir, and the wine is bottled without heavy filtration, preserving texture, aromatic nuance and a distinctly unpolished authenticity.
