Tasting Notes
In the glass, Bissextile Brut Rosé shows a luminous salmon-pink hue with fine, persistent bubbles that form a delicate mousse. The nose is expressive and complex, weaving together red berry notes—think wild strawberries, raspberries, and redcurrants—with hints of blood orange, rose petals, subtle vanilla, and gentle spice from barrel vinification.
On the palate, this rosé is generous and structured, with a core of ripe red fruit framed by a satisfying vinosity. The old-vine red wine component lends extra density and a warm, spicy undertone, complemented by notes of brioche and a touch of dried herbs. The finish is long, precise, and dry, with a refreshing mineral streak that keeps everything in balance. Production
Sourced from the chalk- and limestone-rich soils of the Champagne region, this cuvée is anchored by a single parcel of old vines whose ideal exposure and natural low yields concentrate flavor and structure. The grapes for the red wine component are harvested only in the best years, when full ripeness and balance can be achieved, then vinified exclusively in barrels to build texture, spice, and complexity. Carefully blended with white base wines to craft a rosé d’assemblage, the wine undergoes its second fermentation in bottle and is aged on lees to develop finesse, fine bubbles, and a seamless integration of its bold, vinous character.
Food & Serving
This is a gastronomic rosé Champagne that shines at the table. Pair it with tuna tartare, salmon sashimi, or seared scallops, as well as duck breast with cherries, roast poultry, charcuterie, or herb-crusted lamb. It also works beautifully with aged hard cheeses and savory tarts. Serve well-chilled at 8–10°C (46–50°F); no decanting is required, but pouring it into a slightly larger white-wine glass will allow the aromas and structure to fully open.
