Sourced exclusively from Grand Cru villages in the Côte des Blancs and aged for five years in the house’s deep cellars before disgorgement, it combines precision, richness, and impressive depth. This is a Champagne that captures both the elegance of Blanc de Blancs and the historic prestige of Grand Cru terroir.

Tasting Notes
In the glass, it shows a luminous golden color with a stream of very fine bubbles. The nose is expressive and layered, offering citrus, apricot, and green apple, lifted by notes of toasted nuts, yeast, and brioche. The palate is intense and highly focused, with fresh fruit, white flowers, butter, and roasted brioche woven together in a beautifully balanced style. Its structure and depth suggest excellent short- to medium-term aging potential, though it is already drinking very well now.

Production
This Blanc de Blancs is made entirely from Chardonnay grown in Grand Cru villages in the Côte des Blancs, where the chalk-rich soils are ideally suited to the grape. The combination of cool climate and limestone terroir gives the wine its hallmark tension, purity, and finesse. After traditional vinification, it matured in De Saint Gall’s cellars for five years before disgorgement, allowing autolytic complexity to develop alongside the wine’s vibrant fruit character.

Food & Serving
Serve this Champagne well chilled at around 8–10°C. It pairs especially well with oysters, scallops, sushi, lobster, roast chicken, creamy poultry dishes, and aged hard cheeses; it can also complement fine appetizers and elegant canapés. Decanting is not recommended, but a few minutes in the glass will help reveal its aromatic layers.
