Production
Les Folatières is one of Puligny-Montrachet’s most prized Premier Crus, located on the mid-slope with ideal exposure and well-drained limestone-clay soils that naturally limit yields and concentrate flavor. These stony, calcareous parcels give the wine its flinty, saline edge and fine-boned structure. The Chardonnay is typically hand-harvested at optimal ripeness to preserve acidity and aromatic precision, with a rigorous selection of bunches both in the vineyard and at the winery. After gentle pressing, the must is fermented in French oak barrels, often with a significant proportion of fine-grain, mostly used oak to avoid overpowering the terroir expression. The wine is then aged on its lees for several months, with careful bâtonnage as needed to build texture and complexity, before a light filtration and bottling to retain clarity and purity of fruit.

This Puligny-Montrachet 1er Cru is a natural partner for refined dishes. Think poached or grilled turbot, sole meunière, scallops with beurre blanc, lobster, or langoustines, as well as roast chicken with morel cream sauce, veal blanquette, or truffled risotto. It also shines alongside simple preparations of high-quality ingredients such as fresh goat’s cheese, Comté, or lightly aged Gruyère. Serve slightly chilled at around 10–12°C (50–54°F) to allow the aromatics and texture to unfold gradually. In its youth, decanting for 30–45 minutes can help the wine open and reveal more floral and nutty complexity; older bottles should be carafed gently, if at all, to avoid disturbing any sediment.
