David Moret Meursault 1er Cru Les Perrières 2021 is a precise, finely etched expression of one of Meursault’s most revered Premier Cru vineyards. Sourced from the stony, mineral-rich slopes of Les Perrières, this Chardonnay combines Burgundy’s classical richness with striking tension and energy. Revered by collectors and sommeliers alike, Les Perrières is often cited as Meursault’s most ‘Grand Cru–like’ site, and this 2021 release captures that pedigree in beautifully detailed form.

Tasting Notes
In the glass, the wine shows a luminous pale gold color with subtle green highlights, hinting at both youth and freshness. The nose is refined and layered, opening with lemon zest, white peach, and crisp pear, then unfolding into notes of acacia blossom, hazelnut, fresh butter, and a flinty, wet-stone minerality that is very typical of Les Perrières. On the palate, this Meursault 1er Cru is taut and focused, with a vibrant core of citrus and orchard fruit framed by a precise, saline edge. The oak is masterfully integrated, offering whispers of toast, vanilla pod, and brioche without ever dominating the fruit or minerality. The texture is both silky and nervy, carried by a racy acidity that stretches the wine into a long, chalk-inflected finish. The 2021 vintage delivers superb balance and freshness, and while already impressive in its youth, this wine has excellent aging potential: it should evolve beautifully over 8–15 years, developing deeper nutty, honeyed, and truffled complexities with time in bottle.

Production
Les Perrières is one of Meursault’s most prized Premier Cru vineyards, characterized by poor, rocky limestone soils with a high proportion of stones that promote superb drainage and a distinct, chiseled mineral profile in the wines. The site’s ideal exposition and relatively high position on the slope help retain freshness, giving wines that are often more linear and tense than classic, broader-shouldered Meursault. David Moret works with sustainably and often organically farmed old-vine Chardonnay from this terroir, with careful hand-harvesting at optimal ripeness to protect the delicate berries. In the cellar, fermentation typically takes place in French oak barrels (with a judicious use of new oak), followed by extended lees aging with bâtonnage as appropriate to build texture and complexity while preserving the wine’s precision. Minimal intervention, gentle handling, and careful élevage aim to let the character of Les Perrières speak clearly in the glass.

Food & Serving
This Meursault 1er Cru Les Perrières is an outstanding partner for refined cuisine: think butter-poached lobster, seared scallops, turbot with beurre blanc, or roasted monkfish. It also shines with roasted free-range chicken, veal in a light cream sauce, or delicate dishes featuring morels and white truffles. Aged Comté, Beaufort, or mild, nutty alpine cheeses are also excellent matches. Serve at 10–12°C (50–54°F) to bring out its aromatic complexity and precision. For young bottles, decanting for 30–45 minutes is recommended to allow the nose and palate to fully unfurl; older bottles (8+ years) should be handled gently and decanted only briefly, if at all, to preserve their more evolved, tertiary nuances.

David Moret is a highly regarded micro-négociant based in Beaune, known for crafting small-production, terroir-driven white Burgundies with an almost obsessive focus on Chardonnay. After years working in the wine trade and honing his skills in some of Burgundy’s top cellars, he established his own label, sourcing grapes from a network of top growers in prestigious appellations such as Meursault, Puligny-Montrachet, and Chassagne-Montrachet. Moret’s approach is artisanal and detail-focused: meticulous fruit selection, low yields, and long, careful élevage result in wines that are both pure and expressive of their origins. Within the Côte de Beaune, he has earned a reputation for producing wines of remarkable finesse and consistency, with his bottlings from premier sites like Les Perrières often singled out by Burgundy enthusiasts for their clarity of terroir and age-worthy structure.
