Situated on gentle slopes with good exposure, the vines benefit from excellent drainage and a favorable mesoclimate, allowing Chardonnay to ripen fully while maintaining tension and aromatic freshness. David Moret works with carefully selected parcels, with hand-harvesting at optimal ripeness to preserve both fruit definition and acidity. In the cellar, gentle pressing and a cool, controlled fermentation in French oak barrels (a proportion of which are new) allow the wine to develop texture and aromatic complexity. The wine is then aged on fine lees, with minimal intervention, to build depth and length while retaining the precision and clarity that are hallmarks of Moret’s style.
