Tasting Notes
In the glass, David Moret Chardonnay 2023 shows a pale lemon color with green reflections, signaling its youthful energy and freshness. The nose opens with bright aromas of lemon zest, green apple and pear, layered with white blossom, subtle stone fruit and a hint of crushed shell minerality. Gentle notes of fresh butter, hazelnut and delicate vanilla from judicious oak aging provide an elegant backdrop rather than dominating the fruit. On the palate, this wine is medium-bodied and finely textured, with a lively line of acidity that keeps everything crisp and focused. This Chardonnay is sourced from carefully selected vineyards in Burgundy, where limestone- and clay-rich soils, cool nights and a temperate continental climate give the grapes their tension, aromatic lift and mineral backbone. Grapes are typically harvested by hand to ensure optimal ripeness and to preserve the health of the fruit, with strict sorting both in the vineyard and at the winery. David Moret is known for his meticulous, low-intervention approach: gentle pressing, fermentation in French oak barrels (often with a proportion of new wood), and aging on fine lees to build texture and complexity. Temperature control and minimal pumping help safeguard delicacy and purity, while periodic bâtonnage (lees stirring) adds depth and creaminess to the final wine.

David Moret Chardonnay 2023 is a versatile partner at the table, shining with classic dishes such as roast chicken, veal in cream sauce, grilled or poached white fish, scallops, prawns and other shellfish. It also pairs beautifully with mild, creamy cheeses (such as Brie, Camembert or young Comté), risottos and dishes featuring mushrooms or light butter and herb sauces. Serve at 10–12°C to highlight its freshness and aromatic detail; slightly cooler for an aperitif, slightly warmer with richer dishes. Basic Chardonnay for really good money!

Elegant and very harmonious Burgundy Chardonnay, which also showcases very well the style that David Moret stands for!
