The vines are planted on well-drained, mineral-rich soils composed of a mix of schist, limestone and gravel, which impart the wine’s distinctive stony character. Harvesting is typically done by hand to ensure careful selection of perfectly ripe, healthy grapes. In the cellar, gentle pressing and a cool, controlled fermentation in stainless steel tanks help to protect the delicate aromatics and retain freshness. The wine is then left on fine lees for a period to build texture and complexity before bottling, without heavy oak influence, keeping the focus firmly on fruit and terroir.
