Tasting Notes
In the glass, Damilano Barolo Cannubi 2020 shows a luminous garnet hue with brick-tinged edges, typical of fine Nebbiolo. The nose is refined yet intense, opening with ripe red cherries and dark plums, followed by dried rose petals, violets, and subtle notes of tobacco, licorice, and sweet spice. Hints of tar, leather, and mineral undertones emerge with air, adding depth and layering.
On the palate, the wine is poised and structured, with Cannubi’s characteristic balance of power and grace. Juicy red and black fruit is wrapped in firm but polished tannins, supported by a lively acidity that keeps the wine focused and long. Flavors of cherry, plum, dried flowers, and tobacco evolve into savory notes of earth and spice on the finish. Production
Cannubi is one of Barolo’s most historic and coveted vineyards, a south–south-east facing hillside with a unique soil composition that sets it apart. Here, Damilano’s vines grow in undeveloped, ancient soils composed of clayey marl with a distinctive grey and white surface, and an unusually high sand content of up to 45%. This mix lends the wine its aromatic intensity, elegance, and fine tannin profile. Grapes are carefully hand-harvested at optimal ripeness to preserve both fragrance and structure, then gently crushed and traditionally vinified. Fermentation and maceration typically take place over an extended period to extract color, tannin, and complexity from the Nebbiolo skins, followed by maturation in oak and bottle to refine the tannins and integrate the wine’s layered aromas and flavors.
Food & Serving
This Barolo is a natural partner for rich, savory dishes from Piemonte and beyond. Think braised beef or veal (such as brasato al Barolo), osso buco, game birds, truffle-infused risotto, and wild mushroom dishes, as well as aged cheeses like Parmigiano Reggiano or mature Pecorino. Serve at 16–18°C (60–64°F) to highlight its aromatics and structure. Decanting for 1–2 hours is recommended in its youth to soften the tannins and fully open the bouquet; older bottles may need a gentler, shorter decant primarily to separate sediment.
