Tasting Notes
In the glass, the 2021 Maya is deep ruby to opaque garnet, with a striking, youthful vibrancy at the rim that hints at its long life ahead. The nose is refined and layered: violets, blackcurrant and black cherry are framed by notes of graphite, fresh-turned earth, clay, tobacco leaf and a cooling lift of mint and subtle spice. On the palate, this is medium to full-bodied but wonderfully composed, with a cool, silken texture and ultra-fine tannins. Ripe cassis, blackberry and plum are interwoven with hints of cocoa, tobacco, savory herbs and stony minerality. The finish is long, savory and persistent, with lingering florals and dark fruit that unfurl slowly in the glass. While already remarkably accessible and harmonious, the wine has the structure and balance to evolve beautifully for two decades or more under proper cellaring.

Production
Maya is sourced from Dalla Valle’s estate vineyard high on the eastern bench of Oakville, where rocky, iron-rich volcanic soils, excellent drainage and afternoon exposure create ideal conditions for Cabernet Sauvignon and Cabernet Franc. The site is farmed with meticulous care, using sustainable and organic-leaning practices, and all fruit is hand-harvested in small lots at optimal ripeness. In the cellar, parcels are vinified separately, with careful sorting, gentle extraction and fermentation in small tanks to preserve purity and nuance. The final blend—dominated by Cabernet Sauvignon with a significant proportion of Cabernet Franc—is aged in high-quality French oak barriques, a large portion of them new, to add polish and complexity without overwhelming the wine’s natural elegance and terroir expression.

Food & Serving
Maya 2021 is a natural partner for refined, flavorful dishes such as dry-aged ribeye, roasted lamb with rosemary, beef tenderloin with wild mushrooms, or duck breast with a red-wine reduction. It also pairs beautifully with aged hard cheeses like Comté, Parmigiano-Reggiano or mature cheddar. Serve at 16–18°C (60–65°F) for optimal expression. Young bottles will benefit from 2–3 hours in a decanter to allow the aromatics to fully open and the texture to soften; older bottles (10+ years) should be decanted gently just before serving to separate from any sediment.
