Croatto Sauvignon Blanc 2007

Croatto Sauvignon Blanc 2007 is a mature and expressive white wine from Friuli Colli Orientali, showing why this region is so highly regarded for Sauvignon Blanc with real depth and character. Made from 100% Sauvignon Blanc and shaped by the area’s ponca soils, it combines aromatic intensity, minerality, and a refined structure that has developed beautifully with age.

Tasting Notes
In the glass, it pours a golden straw-yellow with clear mature reflections. The nose is complex and evolved, offering elderflower, ripe gooseberry, tropical fruit, dried herbs, honey, a touch of smoke, and a subtle mineral edge. The palate is medium to full-bodied with rounded acidity, a supple texture, and notable depth. Flavours of dried fruit, herbs, and gentle spice carry through the long, persistent finish. This is a fully developed wine and is best enjoyed now, while its tertiary complexity is at its peak.

Production
The wine comes from vineyards in Colli Orientali del Friuli, where marl- and sandstone-rich ponca soils contribute minerality, structure, and a lightly saline character. Cool nights and a long growing season help preserve freshness while allowing the fruit to reach excellent ripeness. Vinification is carried out with temperature-controlled fermentation, and part of the wine is matured in wood to add complexity and dimension without masking the varietal profile. Extended bottle ageing has further enhanced its layered, mature character.

Food & Serving
This Sauvignon Blanc works beautifully with roasted poultry, creamy risotto, mature goat’s cheese, grilled fish, and dishes with herbs or light spice. Serve at 11–13 °C, and decanting is generally not necessary, though a short aeration can help open up its more developed aromas if the bottle has been resting for a long time.
