Tasting Notes
In the glass, Čotar Merlot 2009 shows a deep garnet core with brick-tinged edges, a clear sign of its maturity and careful evolution. The nose opens slowly, first with dried cherries and black plums, then moving into notes of tobacco leaf, leather, cedar, and warm spices, with hints of dried Mediterranean herbs, forest floor and a faint mineral smokiness that recalls sun-warmed stones.
On the palate, the wine is medium to full-bodied, elegant rather than heavy. The fruit is beautifully evolved—think dried red and black berries, plum compote and a touch of fig—wrapped in fine, resolved tannins. Earthy nuances, savory spice and a distinct mineral line lend energy and structure, while the natural freshness of Kras keeps everything in balance. The finish is long and gently warming, with lingering notes of dried cherry, cocoa and subtle herbs. Properly stored bottles of this 2009 are drinking very well now and can continue to evolve gracefully for a few more years, gaining additional tertiary complexity.
Production
The Merlot for Čotar 2009 comes from the rugged Kras region, where vines grow in iron-rich red karst soils over hard limestone at relatively high altitudes. This is a windy, sun-drenched area, with stark diurnal shifts that help preserve acidity and aromatic intensity. Čotar works organically and in a low-intervention style, with hand harvesting at optimal ripeness to ensure only healthy, concentrated grapes make it to the cellar. Fermentation typically takes place with indigenous yeasts in traditional vessels, often with extended maceration on the skins to extract depth, structure and authentic terroir character. The wine is then aged in neutral wooden barrels, allowing slow micro-oxygenation and refinement without overt oak flavors, and is usually bottled with minimal fining or filtration and low sulfur, preserving the wine’s natural texture and personality.

Čotar Merlot 2009 pairs beautifully with rustic, flavorful dishes that echo its earthy and savory character. Think slow-braised beef, lamb shank, venison stews, game birds, roasted pork with herbs, mushroom risotto, or aged hard cheeses such as Parmigiano-Reggiano or mature Comté. It also works well with truffle dishes and charcuterie featuring cured meats from the region. Serve slightly below room temperature, around 16–18°C (60–64°F), to keep the freshness and structure in focus. Decanting for 45–60 minutes is recommended to let the mature aromas fully open and to soften any remaining tannic edges, especially if the bottle has been resting for many years.
