Description
Contadi Castaldi Franciacorta Pinònero Natura Dosaggio Zero 2017 is a precise, characterful expression of Pinot Nero from the heart of Lombardy’s famed sparkling wine region. Crafted with no dosage, it showcases the grape and terroir in their purest form, offering a bone-dry, elegant style for those who appreciate tension, minerality and finesse. This Franciacorta builds on the region’s traditional methods while highlighting Contadi Castaldi’s innovative approach to Pinot Nero in sparkling form.
Tasting Notes
In the glass, this Franciacorta typically shows a luminous, pale straw to light copper hue, animated by a fine and persistent mousse. The nose opens with delicate notes of red apple skin, wild berries and citrus zest, layered with hints of white flowers, toasted bread, and chalky minerality.
On the palate, it is taut, dry and linear, with the no-dosage style emphasizing precision and freshness. Expect flavors of crunchy orchard fruit, raspberry, grapefruit and subtle spice, all wrapped in a firm, saline backbone. The Pinot Nero brings structure and a gentle, refined grip, while the long, clean finish leaves impressions of citrus peel and stone. With its vibrant acidity and solid structure, this 2017 has the potential to evolve nicely over the next several years, gaining a bit more complexity and creaminess with further bottle age.
Production
Sourced from select vineyards in Franciacorta, this wine reflects Lombardy’s cool climate, well-drained morainic soils and gentle hillside exposures that suit Pinot Nero particularly well. Grapes are usually harvested by hand to ensure careful selection and integrity of the fruit. Vinification follows the classic metodo tradizionale: a primary fermentation in temperature-controlled tanks, followed by a secondary fermentation in bottle and extended aging on the lees to build texture and complexity. The “Natura Dosaggio Zero” designation means no dosage is added at disgorgement, allowing the natural character of Pinot Nero, the acidity and the terroir-driven minerality to shine through without any added sweetness.
Food & Serving
This ultra-dry Franciacorta pairs beautifully with refined, savory dishes where freshness and precision are key. Think crudo or carpaccio of fish, oysters and shellfish, sushi and sashimi, lightly fried seafood, or delicate vegetable tempura. It also works well with soft-rind cheeses, charcuterie, and simple dishes featuring mushrooms or roasted poultry. Serve well-chilled at around 6–8°C (43–46°F) to highlight its vibrancy. A brief 10–15 minutes in the glass or in an open bottle is usually enough “decanting” for the wine to unfurl its aromatic complexity.
