Harvest is carried out selectively, often by hand, to ensure only optimally ripe clusters make it to the cellar. In the winery, the must undergoes a controlled fermentation with extended maceration to extract color, tannin, and aromatic compounds, followed by maturation in oak (often a combination of barriques and larger casks) to integrate the tannic backbone and add subtle spice. After barrel aging, the wine spends additional time in bottle before release, allowing the powerful Sagrantino character to begin harmonizing.
