Tasting Notes
In the glass, it is deep and intense, with a dark ruby core that hints at its concentration. The nose is generous and complex, offering ripe red and black berries, warm baking spices, vanilla, and subtle oak tones from the Syrah component aged in new barrels. On the palate, the wine is lush, dense and sensuous, with waves of fresh red fruit, dark berry sweetness and a layered, textured feel. There is notable richness and power, supported by spice and a long, warming finish; the alcohol is present, so while the wine is already highly enjoyable, it is best suited to drinking in the near term rather than extended cellaring.

Production
Combe des Fous comes from the Châteauneuf-du-Pape appellation in the southern Rhône, where sun-drenched vineyards and the region’s classic galets roulés contribute to ripe, concentrated fruit. The cuvée includes a portion of Syrah matured in new oak, which adds structure, spice and vanilla complexity to the wine’s naturally generous profile.

Food & Serving
This is a bold food wine that pairs well with grilled lamb, rosemary-roasted beef, game, rich stews and dishes with Provençal herbs. Serve at around 16–18°C, and consider a short decant of 1–2 hours to open the aromas and soften the wine’s youthful intensity.
