Claudio Mariotto’s Colli Tortonesi Timorasso Cavallina is a compelling expression of one of Piedmont’s most distinctive white grapes. Made from 100% Timorasso and shaped by a thoughtful, low-intervention approach, it captures both the grape’s natural depth and the producer’s long-standing passion for this variety. Timorasso has become something of a modern classic in the Colli Tortonesi area, prized for its structure, complexity, and ability to age beautifully.
Tasting Notes
In the glass, it shows a clear, intense golden yellow that already hints at its concentration and depth. The bouquet is layered and expressive, with mineral notes lifted by hawthorn, chamomile, peach, and apricot.
On the palate, it is dry, textured, and full of character, balancing ripe stone fruit with a distinct mineral backbone and a refined, elegant finish. Its structure and acidity suggest excellent aging potential, with the wine likely to gain further nuance and complexity over time.
Production
The grapes come from Colli Tortonesi in Piedmont, where Timorasso finds one of its most celebrated homes. Harvest takes place at the end of September, when the fruit has reached full aromatic maturity, and the grapes are gently and slowly pressed to preserve finesse. Fermentation occurs spontaneously under temperature control, followed by one year on fine lees in stainless steel tanks and at least 12 months of bottle aging; the vineyard is farmed with common sense and without pesticides.
Food & Serving
This is a versatile food wine that pairs especially well with rich seafood, shellfish, roast chicken, poultry with herbs, creamy risottos, mushroom dishes, and mature hard cheeses. Serve it at around 10–12°C to bring out its aromatics and texture. Decanting is not essential, but a brief aeration can help the wine open up, particularly in its youth.
