Description

Tasting Notes
Pale to medium salmon in the glass, this rosé offers a refined aromatic profile with delicate red berry fruit, citrus peel, floral accents, and a subtle, savory edge. A faint lift of blood orange adds freshness and complexity, while the oak aging brings gentle texture and hints of spice and creaminess.
On the palate, it is powerful yet beautifully composed, with generous fruit, fine acidity, and a rounded, full-bodied mouthfeel. The finish is long and layered, balancing ripe fruit with mineral tension and a dry, polished character. Thanks to its structure and depth, it can be enjoyed young for its vibrancy, but it also has the concentration to develop gracefully over the next few years.
Production
The grapes come from north-facing slopes in the Palette appellation, where gravelly, limestone-rich soils help preserve freshness and precision in the warm Provençal climate. Harvesting is done entirely by hand at full ripeness, with careful sorting both in the vineyard and at the cellar. Vinification follows a meticulous traditional approach: gentle pressing, partial destemming, vertical hydraulic pressing, manual clarification of the must, and blending with a small proportion of blood orange juice. The wine is then aged exclusively in small oak barrels and refined on its fine lees before natural settling by racking.
Food & Serving
This rosé is an excellent partner for refined Mediterranean dishes, grilled shellfish, lobster, herb-roasted poultry, salmon, bouillabaisse, or vegetable dishes with fennel, citrus, and Provençal herbs. Serve it slightly chilled, ideally around 10–12°C, to preserve its aromatic detail and structure. Decanting is not usually necessary, though a short time in the glass can help it fully open up.
