Chateau Peby-Faugeres Saint-Emilion Grand Cru 2021 is a powerful yet polished expression of old-vine Merlot from the clay-limestone slopes of Saint-Émilion. Crafted exclusively from the estate’s finest, low-yielding parcels, it marries depth and opulence with striking freshness and precision. The 2021 marks the first vintage made in the château’s new, state-of-the-art cellar, further refining a wine that has already earned legendary status in Bordeaux critic circles.

Tasting Notes
In the glass, this Saint-Émilion Grand Cru shows a deep, intense, almost opaque ruby-purple hue, hinting at its concentration and youth. The nose is immediately engaging, with layers of ripe blackberries, black cherries and cassis wrapped around notes of black olive, truffle, dark chocolate and subtle toasted spice. On the palate, the 2021 is full-bodied yet beautifully balanced, with a round, velvety texture and ultrafine, polished tannins. The core of dark fruit is both rich and refined, lifted by a vibrant line of acidity that brings energy and length. Savory nuances of graphite, licorice and earth build complexity toward a long, flavor-packed, silky finish. While already harmonious in its youth, this wine has the structure and concentration to age gracefully from 2025 and evolve over two decades or more, rewarding patience with added nuance and tertiary complexity.

Production
Château Péby Faugères is rooted on prime clay-limestone terroir on the slopes of Saint-Émilion, an ideal setting for Merlot to achieve both power and finesse. The 2021 is produced from 100% old-vine Merlot, planted in a single block of the estate’s best parcels and tended with exacting care to keep yields low and fruit quality high. Harvesting is carried out by hand, with rigorous sorting to ensure only perfectly ripe, healthy grapes reach the cellar. In their new, showcase winery, grapes are vinified in small lots to express the nuances of each parcel, typically with careful temperature control, gentle extraction and extended maceration to build depth without harshness. The wine is then aged in French oak barrels, a significant portion new, allowing the texture to soften and the aromas to gain complexity while preserving the purity and freshness of the fruit.

Food & Serving
This richly textured yet finely sculpted Saint-Émilion is a natural partner for refined dishes such as dry-aged ribeye, roast lamb with rosemary and garlic, duck breast with a red wine reduction, or classic French fare like beef tournedos and truffle-infused dishes. It also pairs beautifully with mushroom-based plates, truffled risotto, and aged hard cheeses such as Comté or mature Gouda. Serve at 16–18°C (60–64°F); if opened in its youth, decant for 1–2 hours to allow the aromatics and tannins to fully unfurl. As the wine matures, shorter decanting times will suffice, mainly to let it breathe and reveal its more subtle, tertiary notes.

Château Péby Faugères is a star of the Vignobles Silvio Denz portfolio, created in 1998 as a dedicated, top-tier cuvée from the finest Merlot parcels of Château Faugères. Named in tribute to former owner Pierre-Bernard Guisez, known as “Péby,” the estate quickly rose to prominence: the 2000 vintage, dubbed a “Legend of the Future,” was singled out by Robert Parker among the top wines of Bordeaux, with the 2005 earning a rare 100/100 score in The Wine Advocate. Today, Péby Faugères is recognized as one of the elite Merlot-driven wines of Saint-Émilion, combining meticulous vineyard work, cutting-edge cellar technology and a clear focus on quality to produce some of the appellation’s most sought-after, critically acclaimed bottlings.
