Grapes are picked parcel by parcel at optimal maturity, typically by hand, to preserve fruit integrity. In the cellar, fermentation takes place in temperature-controlled vats, with gentle extraction to emphasize finesse over power. The wine is then aged in French oak barrels—typically a proportion new and the remainder second-fill—for around 16–18 months, allowing tannins to soften and the aromatic complexity to develop without overwhelming the purity of the fruit.
