Château Latour 2007

Château Latour 2007 is a refined Pauillac red from one of Bordeaux’s most legendary estates, offering the depth, structure, and pedigree collectors expect from a First Growth. Made from a classic Cabernet Sauvignon-led blend, it captures the estate’s signature power and mineral precision, while the 2007 vintage brings a surprisingly supple, approachable side.

Tasting Notes
In the glass, it shows a dense ruby-purple color that hints at its concentration. The nose opens with sweet black fruits, spring flowers, and a distinctive mineral edge, adding elegance to the wine’s rich fruit core. On the palate, it is medium- to full-bodied with generous texture, soft tannins, and a beautifully layered mouthfeel. The wine feels evolved yet still structured, with the balance and freshness to age gracefully for another two decades or more.

Production
Château Latour’s vineyards are rooted in the gravels of Pauillac, where deep gravel and clay soils, topped with rounded stones, retain heat and help ripen Cabernet Sauvignon with remarkable consistency. The estate’s 78 hectares are planted primarily to Cabernet Sauvignon, with smaller proportions of Merlot and Cabernet Franc, reflecting the classic Left Bank style. In recent years, the property has moved toward more environmentally conscious farming, and since 2015 the vineyard has been fully organically managed, with horses used for ploughing and natural fertilization.

Food & Serving
This wine is best served with fine cuts of beef, lamb, game, or richly flavored dishes such as roast duck and truffle-based preparations. Serve at 16–18°C, and consider decanting for about 1–2 hours if enjoying it young, to allow the bouquet and texture to खुल fully.
