This rare Château Doisy-Védrines Collection Case is a true treasure for lovers of mature Sauternes and Barsac. Curated directly from the château’s own cellars, it brings together six beautifully aged bottles from legendary vintages: 1975, 1983, 1986, 1988, 1989 and 1990. With only 50 cases produced, and several of these wines highly rated by Robert Parker, this is an exceptional chance to experience the evolution of one of Barsac’s great sweet wines across four decades.

Tasting Notes
Each bottle in this collection showcases the golden, deepening hues that only time can bring: from rich amber with copper highlights in the oldest vintages to intense, burnished gold in the younger ones. The nose typically offers layers of dried apricot, candied orange peel, acacia honey and saffron, alongside notes of roasted nuts, crème brûlée, wax, ginger and a touch of mushroom or forest floor in the most mature examples—classic signatures of long-aged Barsac. On the palate, Doisy-Védrines is known for its balance: opulent sweetness framed by vibrant acidity typical of Barsac’s limestone-influenced terroir. Expect complex flavors of marmalade, dried mango, figs, baked quince and honeyed stone fruit, evolving into caramel, toasted brioche, almond, spice and subtle truffle tones with age. The older vintages in this case will show more tertiary depth and silky texture, while the younger bottles (late ’80s/1990) retain extra freshness and energy. All wines have already enjoyed long, careful maturation—yet well-stored bottles from these vintages can continue to evolve beautifully, offering further nuance rather than simple power.

Production
Château Doisy-Védrines is based in Barsac, within the Sauternes area of Bordeaux, on a terroir of clay with cobalt and gravel over the limestone soils that give Barsac its hallmark finesse and lift. The estate farms around 25 hectares planted exclusively to white varieties—primarily Sémillon, complemented by Sauvignon Blanc and Muscadelle—with vines averaging about 40 years of age. Grapes are picked entirely by hand in successive passes through the vineyard, selecting only bunches and berries affected by noble rot (Botrytis cinerea). The winemaking is deliberately gentle and traditional, with a very long, additive-free fermentation that allows the botrytised fruit to express its full complexity. The wine is then aged in French oak barrels for a minimum of six years, a remarkably extended élevage that helps to build texture, stability and extraordinary longevity. The estate is certified organic, underscoring its commitment to careful, low-intervention viticulture.

Food & Serving
Mature Sauternes and Barsac are remarkably versatile at the table, and this Doisy-Védrines collection is no exception. Classic pairings include foie gras terrine, blue cheeses such as Roquefort or Stilton, and rich pâtés, but the wine also shines with roasted poultry and game birds, lobster with butter-based sauces, or dishes featuring apricot, citrus or light curry spice. For dessert, think fruit tarts, crème brûlée, tarte Tatin or almond-based pastries—though the more evolved bottles can easily be enjoyed on their own as a meditative, after-dinner wine. Serve slightly chilled, around 10–12°C (50–54°F); the very old vintages can be allowed to warm gently in the glass to reveal more complexity. Brief decanting (15–30 minutes) is usually sufficient for younger bottles in the case, while the oldest should be handled delicately—often just careful pouring off any sediment into a clean decanter or directly into large glasses is enough.
