Chateau De Tholomies Le Chapelle Minervois La Liviniere 2018 is a refined Languedoc red that shows just how serious this southern French terroir can be. From one of the top crus of Minervois, it delivers depth, structure and Mediterranean warmth in a polished, contemporary style. Crafted by Domaine de Tholomies, it captures the balance between ripe fruit, savory complexity and a compelling sense of place.
Tasting Notes
In the glass, Le Chapelle 2018 is a deep, vibrant ruby with garnet reflections at the rim, hinting at both concentration and a touch of evolution. The nose opens with dark cherries, blackberries and ripe plums, layered with notes of garrigue herbs, black olive, licorice, cracked pepper and a subtle touch of toasted spice from barrel aging.
On the palate, the wine is full-bodied and supple, with well-knit tannins and a generous core of dark fruit. Syrah-driven pepper and spice mingle with Grenache-like juiciness and the savory chew of Mediterranean herbs, while a fresh, mineral line keeps everything in balance. The finish is long and persistent, with lingering notes of cocoa, dried thyme and black fruit. Enjoyable now with a short decant, it has the structure to evolve gracefully for another 5–8 years, gaining further complexity and softer tannins.
Production
Minervois La Livinière is one of the Languedoc’s first recognized crus, known for its sun-drenched hillsides, rocky limestone and clay soils, and cooling breezes from the Montagne Noire. Domaine de Tholomies sources fruit from carefully tended vineyards where yields are kept low to concentrate flavor, with much of the work done by hand to ensure optimal selection of bunches at harvest. The blend is typically built around Syrah with Grenache and Mourvèdre, fermented in temperature-controlled tanks to preserve purity of fruit before aging in a mix of stainless steel and oak to integrate tannins, add complexity and respect the character of the terroir.
Food & Serving
This is a versatile, gastronomic red that shines alongside hearty Mediterranean cuisine. Think grilled lamb chops with rosemary, beef stews, duck confit, slow-roasted pork shoulder, or dishes featuring olives, tomatoes and Provençal herbs; it also pairs beautifully with aged hard cheeses and charcuterie. Serve at around 16–18°C (60–64°F) and, for current drinking, give it 30–60 minutes in a decanter to let the aromatics fully unfold and the tannins relax.
